Banana Oat Cookies

I consistently use bananas to help ripen my avocados in a paper bag. But once they are done helping to ripen they are generally brown and mushy. Yuck! These healthy cookies are an outstanding way to use up those old, brown, mushy bananas. Yes, you can make banana bread out of them; but I have never been a banana bread kind of girl. Let's get into the mushy details of these cookies!

You will need:

  • 2 overly ripe bananas

  • chocolate chips (I chose dark chocolate)

  • 1.5 cups old fashioned oats

Super easy! Preheat your oven to 350 degrees. First mash up your 2 bananas with a fork and add the 1.5 cups of oats. Combine the ingredient through.

Next add your chocolate chips....as much or as little as you would like! Then on a cookie baking sheet make small round cookies about the size of your palm. Bake at 350 degrees for 15-18mins. If you make smaller cookies, then bake for 13-15 mins.

Let them cool about 5 mins and enjoy! Not only are these a great dessert but you can enjoy with ice cream OR as a healthy breakfast cookie! I highly recommend the last two.
