Champagne Jello Shots

What's more iconic than Champagne on New Years Eve? This year we went to a friend's new home for their NYE party. I didn't want to just bring a bottle of champagne and be boring. I wanted to try something new, fun and a little sparkly. Champagne Jello shots were exactly what the end to 2023 needed!

Each batch makes about 18 Jello shots. What you will need:

  • Plastic cups with lids (I got mine at Smart & Final)

  • 1 baking sheet

  • Plain gelatin box (5 tablespoons of gelatin if you get a larger container-Knox is the brand that makes the plain one)

  • 1 bottle of champagne-I opted for Korbel

  • Lemon Juice (1 teaspoon)

  • Simple sugar (1/2 cup)

  • Gold flaked sprinkles (I got mine at Michaels)

First, I laid out my plastic cups on a baking sheet to make the relocation to and from the refrigerator easier.

After laying these out, I put 2/3 of my bottle of champagne in a sauce pan.

Do not turn the heat on the stove YET! We want the alcohol and those bubbles to stay put for the time being. Next, add the 1/2 cup of simple syrup and the 1 teaspoon of lemon juice. Stir this all together. Finally, add the gelatin in a light sifting motion over the top of the pan to completely cover the champagne mixture. Let sit for 4 minutes. You will see your gelatin look like it is curdling, as if it was milk, but don't be alarmed this is how it's supposed to look. I promise!

Finally, you can turn the stove on medium heat and mix the gelatin with the champagne and that final 1/3 bottle of champagne. Let this heat and incorporate the gelatin into the liquid. After the 5 minutes, remove it from the heat completely and let cool for 4 minutes. Use whatever kind of transfer cup you would like (I opted for a measuring cup for easy pouring) to transfer the liquid to the cups. Place in your refrigerator for 3 hours.

After the three hours, remove the jello shots and sprinkle the gold flakes on top. Place the tray back in the refrigerator for another 1-2 hours. Once set, they are super easy to transport to a party, the beach, a block party, etc. They were a huge hit at our party for New Years Eve and I hope they will be at yours as well! Also, we did a batch of regular champagne and a batch of rosé. I have to say the rosé ones were pretty tasty!
