I have grown up eating delicious deviled eggs my whole life. But I have found that the prep and peeling the perfect egg after boiling them can be a painful part of making these. BUT, I found ready to eat hard-boiled eggs in the refrigerated section at Costco. Can we say score!!! This cuts down the prep time on making these by hours! You don't have to hard-boil, peel and cool down the eggs prior to assembling.
Here's what you'll need:
1 dozen eggs (either raw or pre-hard-boiled)
1/4 cup plain Greek yogurt
3 tablespoons yellow mustard
1 teaspoon garlic powder
salt and pepper to taste
paprika sprinkled on top
You honestly can't go wrong with these hard-boiled eggs from Costco. The box comes with 16 packs (2 eggs in each) for about $12. Depending on how many people you plan to feed you may use all 16 packs. I used 12 which gave me 24 eggs and 48 halves for my deviled eggs.
First step is to cut your eggs lengthwise and carve out the yolk into a separate bowl.
After cutting all your eggs and getting the yolks out, add the 1/4 cup of Greek yogurt and the 3 tablespoons of yellow mustard to the yolks. Use a fork to break up all the yolks and mix until the yolk mixture is a smooth consistency. Next, add the 1 teaspoon of garlic powder and the salt and pepper for taste.
I grabbed the smallest spoon in my drawer to help fill each egg. Scoop desired amount into each egg white. Just be aware that the more you fill them the less of the filling you will have towards the end. So, you may end up with egg whites with no filling. Sprinkle the paprika on top. You are done! Refrigerate them until you are ready to serve.
This appetizer is great for those who want to eat at a Super Bowl party but want to stick to their health goals. This recipe is all protein and no carbs. It is very filling and even keeps for great leftovers for the next day! I can't wait to hear what you guys think!
